Eggless Banana Coconut Muffins | केले और नारियल वाले मफिन्स

I am very excited to post my first baking recipe! It was not much long ago when baking looked a mountainous task to me but I always wanted to get into that arena and bake something like an eggless cake or muffins or pizza as well! And here I am today with my first baking recipe of Eggless Banana Coconut Muffins!



When I started baking, I used to read that Home Baking is an addiction and now I can perfectly understand why they say so. It is my new passion and now I always think how I can twist a recipe to pop it in the oven ;).

Baking gives joy & satisfaction and the happiness doubles when you see your Muffins & Cakes rising beautifully in the oven. I love to bake in the morning as whole Kitchen and home gets filled with the sweet aroma of the baked delicacies.

Here is my favourite Eggless Banana Coconut Muffins recipe which I tried so many times and it comes out perfect always. Coconut Milk and Banana makes the Muffins super soft and moist that you do not even miss an egg in this version. 

Whenever I use oil in making Muffins and Cake, I bring out my Mixer to do the job of mixing all the wet ingredients, Yes!! you heard it rite, a mixer! I put all my wet ingredients in a mixer and pulse it for a minute to make a fluffy, airy and smooth mixture. You can also use Stand Mixer or Hand Mixer but if you don't have any or you are not in mood to exercise by mixing everything with hand using spatula, try the Mixer. I consider it as my key Gadget in the Kitchen as I use it almost everyday.

 

Eggless Banana Coconut Muffins Recipe

Prep Time 15 Mins  |  Baking time: 20 Mins  | Serves - 10-12 Pieces

Ingredients:

  • All Purpose Flour (APF) । मैदा - 1 cup
  • Cornflour or Cornstarch । कॉर्नफ्लोर - 2 tbsp
  • Desiccated Coconut । नारियल का बूरा - 3/4 cup 
  • Baking Powder । बेकिंग पाउडर  - 1 tsp
  • Baking Soda । बेकिंग सोडा - 1/2 tsp
  • Salt । नमक - A pinch
  • Powdered Sugar । शक्कर का बूरा  - 1/2 cup (I used 1/2 cup minus 1tbsp granulated and pulse it in a Mixer)
  • Ripped Bananas | पके हुए केले - 2 large 
  • Unflavoured Oil । तेल -  3 tbsp
  • Yogurt or Curd । दही - 6 tbsp
  • Coconut Milk । नारियल का दूध - 1/2 cup
  • Vanilla Extract । वैनिला एक्सट्रेक्ट - 1 tsp
  • Few Banana slices and 1 tbsp Granulated Brown Sugar (optional) । गार्निशिंग के लिए केले के कुछ स्लाइस और एक चम्मच ब्राउन शुगर - to sprinkle on top of the Muffins
Procedure:
  1. Pre-heat the oven at 200 degrees C and line your Muffin try with the Muffin liners and grease them with Oil spray. 
  2. Take all the dry ingredients (from APF to Salt) in a bowl or a plate and mix it using a fork.
  3. Take Sugar, Oil and Banana in a Mixer jar and blend it till it is smooth, then add Yogurt, Vanilla Extract, Coconut Milk and pulse it for few seconds till it get mixed up very well.
  4. Transfer the wet mixture in a bowl and add the dry ingredients in 3 parts (not all at once) and mix (fold in) gently. (Do not over mix it)
  5. Fill the Muffin liners 3/4th full, top them up with some diced Banana slices and Brown Sugar and bake them for 18-20 minutes or until a skewer inserted in the middle comes out clean at 180 degrees C.
  6. Let the Muffins cool down for 5 minutes in the tray and then take them out on a wired rack and cool them completely before serving!



Today, for this post, I halved the recipe (ingredients given below) to make only 6 Muffins.
