Eggless Banana and Chocolate Bread | बनाना चॉकलेट ब्रेड

I have to admit that I am not a Banana fan but it creates magic when you put them in the Muffins, Cakes or Cookies.


Last weekend, we bought a dozen of Bananas and one thing I definitely wanted to try with those is the Banana Chocolate Bread. It is really very hot here in Hyderabad this summer and one good thing it did is to ripe the Bananas fast! :)



I looked at a few recipes for Banana Chocolate Bread and I liked the idea of putting Fresh Bread crumbs while making the bread. I decided to give it a try and guess what, the result was awesome!
Banana and Chocolate Bread came out soft, moist and delicious. This is one recipe that I will like to treasure for long.



At the end, I added hot water which I normally do to make Cakes & Breads soft & moist and therefore I used 1/4 cup of hot water here. Few chocolate chunks got melted because of that and it gave a beautiful light chocolatey colour to the bread. You can also add some nuts & seeds to make it nutty, but it was in itself very flavourful, chocolatey and delicious bread.


Banana and Chocolate Bread Recipe

Ingredients:

  • All Purpose Flour (APF) । मैदा - 1.5 cups
  • Baking Powder । बेकिंग पाउडर - 1 tsp
  • Baking Soda । बेकिंग सोडा - 1/2 tsp
  • Salt । नमक - 1/2 tsp
  • Bread Slices । ब्रेड - 2 to make a fresh Bread crumbs which gave me 1 cup of bread crumbs
  • Oil । तेल - 1/2 cup
  • Sugar । शक्कर - 2/3 cup ( I used mix of Brown and White granulated sugar)
  • Yogurt । दही - 1/2 cup
  • Ripped Bananas । पके हुए केले - 3 medium size
  • Vanila Extract । वेनिला एक्सट्रेक्ट - 1 tsp
  • Lemon Juiceनिम्बू रस - 1 tsp
  • Chocolate chips or chocolate chunks । चॉकलेट चिप्स - 1/2 cup
  • Hot Water। गरम पनि - 1/4 cup
Procedure:
  1. Pre-heat the oven at 200°C and grease Bread Tin with Oil and place a butter paper in it. I have used a rectangular one, you can also use a round pan.
  2. Take all the dry ingredients (from APF to Salt) and sieve them twice.
  3. Chop the chocolate into small chunks and mix 2 tablespoon of the dry ingredients into the chocolate so that the chocolate doesn't get sink at the bottom while baking.
  4. Make the fresh bread crumbs by grinding the bread slices and adding them to the dry ingredients.
  5. Take Sugar, Oil and Yogurt in a Mixer jar and blend it into a smooth paste, then add Vanilla Extract and Bananas and pulse it for few seconds so that the mixture will be little chunky and have some Banana pieces. But you can pulse it longer to get a smooth mixture, if you want.
  6. Transfer the wet mixture into a bowl, add the lemon juice and the dry ingredients in 3 parts (not all at once). Add the chopped chocolates next and mix well. Add hot water and mix gently.
  7. Transfer the batter into the tin and bake for 50 minutes at 180°C or until a skewer inserted in the middle comes out clean.
  8. Let the bread cool down for 8-10 minutes in the tin and then take it out on a wired rack and cool it completely before serving!

Notes:

1. Use the ripped Bananas (when the Banana gets black spots and looks unpleasing to eat as is) for baking as they have much more flavours and sweetness.
2. All the ingredients should be at room temperature.
3. Sieving of dry ingredients give good aeration which helps in making soft and spongy bread.
4. Always measure the ingredients correctly.
