Who doesn't love Pasta? Whether it's with White or Arrabiata sauce or in the Indian style . I love Pastas in all forms and also love to experiment with the flavours. They are hard to resist, comfy and complete meal in itself. And Mac n Cheese is one of my personal favourites.

Today is Mothers' Day and would like to wish all the Moms a happy Mothers' Day. You made this earth a wonderful place to live and I believe this quote holds so true:

"God could not be everywhere, and therefore he made mothers"

Me and my Mother holds a very special connection. Because of her, I am what I am today. She is my strength. She can even understand the things which I don't tell her just by my voice and this amazes me always! I learned cooking from her and would like to dedicate this post to her.



This Mac and Cheese recipe is one of the best I have tried & tasted and am now going to share with you. I like the combination of Potatoes and Cheese, thus added the same in this recipe and the idea of adding Brown Onion I got from my visit to Switzerland last year where I tried Mac n Cheese at the Mt. Pilatus and it was served with Brown Onion and Parmesan Cheese on top which really took the taste of the dish to another level!


Macaroni and Cheese Recipe

Ingredients:

  • Pasta । पास्ता  - 2 cups (any desired shape, I used Penne)
  • All Purpose Flour (APF) । मैदा - 3 tablespoons
  • Butter । मक्खन - 3 + 1 tablespoon
  • Oil । तेल - 2 tsp
  • Milk । दूध - 3 cups
  • Potato । आलू - 1 big cut into small dices
  • Onion । प्याज़ - 1 big cut length wise or can use store bought Fried Onions
  • Garlic । लह्सुन - 4 pods
  • Nutmeg Powder । जायफ़ल - a pinch
  • Chilli Flakes । चिल्ली फलैक्स  - 1/4 tsp
  • Oregano । ऑरेगैनो - 1/2 tsp
  • Black Pepper Powder । काली मिर्च पाउडर - 1/4 tsp
  • Sugar । शक्कर - 1/2 tsp
  • Salt । नमक - as per taste
  • Cheese । चीज़ - 1 cup ( I used mix of Sharp Cheddar, Processed and Mozzarella Cheese)  - You can use as much or as less as your preferences.
  • Bread Slices । ब्रेड - 2 to be grind to make fresh Bread crumbs
Procedure:
  1.  Preheat the oven at 180°C.
  2. Peel and chop Onion, Potatoes and Garlic.
  3. On a high flame, take a pot with water and once it comes to rolling boil, add salt and then pasta and cook till al-dante (to be firm to the bite) or as per the packet instructions. Strain in and keep it aside. Reserve 1 cup of water for the later use.
  4. Grind the bread slices into the fine bread crumbs and transfer into a bowl and mix in 1 tablespoon of melted butter in them.
  5. On a medium flame, put a non stick pan, add 1 tsp of oil and once the oil is hot, add potato cubes and sprinkle a pinch of salt to speed up the cooking time. Cook for 7-8 minutes or till potatoes get cooked (not overcooked) and take them out on a plate.
  6. In the same pan, add another tsp of oil and add Onions, sprinkle a pinch of Salt and 1/2 tsp of Sugar and cook for 7-8 minutes till onions become brown on low to medium flame. (I prefer to saute the Onions in less oil but you can deep fry them or can use the store bought Fried Onions) Keep them aside on a plate.
  7. Again, in the same pan, add the remaining 3 tbsp of butter and chopped garlic and saute for 45 seconds to 1 minute till the raw smell of garlic subsides.
  8. Next add the APF and cook it for 2 minutes on low flame till the colour changes to a very light golden(do not burn the flour, we only need to cook till the rawness of the flour vanish), then add the warm milk and stir constantly to avoid any lumps formation. Cook the mixture while whisking constantly until it thickens enough.
  9. Add the Nutmeg powder, Chilli Flakes, Oregano and Black Pepper powder, mix well and turn off the heat.
  10. Now add the cheese, Pasta, Brown Onions and Potatoes in the white sauce, mix well. Taste and accordingly add salt as our Cheese, Pasta, Onions and Potatoes are having salt already. At this stage, the sauce will become very thick after adding cheese and thus you need to add 3/4 cup of Pasta water which we reserved in Step 2.
  11. Transfer the Pasta into the baking dish, top it with bread crumbs and bake in preheated oven for 20 minutes at 180°Celsius or till its all bubbly and the bread crumbs at the top become crispy.
  12. Let the Pasta cool down for 5 minutes before serving.
