In today's busy life, one among the things that suffers the most is breakfast! What supposed to be the most important meal of the day is often times neglected, missed or even intentionally skipped. And when we sometimes do it, what do we have in the name of healthy breakfasts? Juices with lots of added sugar and preservatives? Oats? Or hot and trending Muesli!

Though Oats and Muesli can be considered good options in comparison to other un-healthy ones but even these store-bought, packaged things does not stand a chance against something that you make in you own kitchen! ;)



I am not totally against the idea of bringing store-bought Muesli or Granola but how about having the same thing (actually better) at home, with much healthier ingredients and zero preservatives! And not to mention, it will be so very much cheaper then the packaged ones and you can even modify the recipe as per your preference.


Homemade Granola is a very forgiving recipe in it's true sense!  You don't have to be exact or precise with the ingredients and can play around with different flavors. What more can we ask for? Let's get our hands dirty and start cooking!


Homemade Granola Recipe

Few things to note. In today's recipe of Homemade Granola,  I have added Dates Syrup as the Sweetener. But you can also use Maple syrup or Honey depending on the availability.  Even brown Sugar with little water does a great job!



Date Syrup is very thick and sticky and thus I heated it up along with very little water, brown sugar, oil and vanilla extract to make it easy to mix with the dry ingredients. Dates have been known for their health benefits for many years and is a part of  Middle Eastern cooking to add flavors to everything from sweet to savory dishes.

For dried fruits, I have used Goji berries, Cranberries and Raisins but any combination of dried fruits can be used as per choice or availability. Also, Chia seeds add a good crunch in the Granola and makes it more healthy. They are loaded with antioxidants, proteins and Omega-3 fatty acids and has other numerous health benefits.


Ingredients:
  • Rolled Oats | ओट्स - 3 cups
  • Mixed Nuts । मेवा - 3/4 cup ( I used Almonds, Cashews, Pistachios and Walnuts) 
  • Chia Seeds । सब्जा के बीज - 2 tbsp
  • Melon Seeds । खरबूजे के बीज - 2 tbsp
  • Cinnamon Powder । दालचीनी पाउडर - 1 tsp
  • Salt । नमक - 1/2 tsp
  • Dried fruits । किशमिश - 1/2 cup ( I used Goji berries, Cranberries and Raisins)
  • Dates Syrup । खजूर सिरप - 1/2 cup
  • Brown Sugar । ब्राउन शुगर  - 2 tbsp
  • Vanilla Extract । वैनिला एक्सट्रेक्ट - 1 tsp
  • Unflavoured Oil । तेल - 1/4 cup
  • Water । पानी - 2 tbsp

Procedure:
  1. Preheat the oven at 180°C.
  1. In a bowl, take Rolled Oats, chopped nuts, Chia Seeds, Melon seeds, Cinnamon Powder and Salt. Mix everything well.
  1. In a pan, take Dates Syrup, Brown Sugar, Vanilla Extract, Oil and Water and heat it up till all these are well combined and the mixture become slightly thin.
  1. Pour the liquid into the Oats mixture and mix everything.
  1. Spread the Oats mixture on a Baking Sheet lined with Parchment paper and bake in preheated oven for 30- 35 minutes at 180°Celsius till the Oats become crispy. (Note: Every 10 minutes, stir the mixture for even baking and to avoid big chunks/clusters )
  1. Take the Baking sheet out and add Dried fruits in the Granola mix and transfer it in a bigger plate to let it cool down completely. Transfer it in a air tight container.
