Raksha Bandhan is a celebration of a very beautiful bonding between Sisters and Brothers, where Sister express her love and wishes for the Brother's well being and the Brothers in turn promises to protect and take care of their Sister/s in all circumstances.

Did you ever imagine, how boring our childhood would have been if we didn't have any sibling to tease, to play and to fight with! I still remember when my lil bro came into this World, I was not letting anyone even touch him, he was like something precious to me. Then, we grew with our fightings on the silliest of things you can't even imagine...and today, I miss that wonderful time.



Today, in honour of this strong bond, I am sharing this Cookie and Cream Parfait recipe which is very easy to prepare with minimal cooking! Minimal so that even Brothers can prepare it to surprise their Sisters on this Raksha Bandhan!

I have made the Chocolate Pudding from scratch, but you can use the store bought Pudding mix and layer each element to make this yummilicious dessert.

Cookie and Cream Parfait Recipe

Prep Time:  20 Mins  |  Assembly time: 10 Mins | Serves 4-7 ppl depending on Serving glass

Ingredients:


For Chocolate Pudding
  • Whole Milk | फुल क्रीम दूध  - 2 cups
  • Cocoa Powder । कोकोआ पाउडर - 1/4th cup
  • Sugar । शक्कर - 4-6 tbsp (adjust according to the taste preferences) I have added 4 tbsp aka 1/4th cup
  • Instant Coffee । कॉफ़ी - 1/2 tsp
  • Vanilla Essence । वेनेला एसेंस - 1/2 tsp
  • Cornflour । कॉर्नफ्लोर - 3 tbsp
  • Rice Flour । चावल का आटा - 1 tbsp
  • Roughly Chopped Chocolate । चॉकलेट टुकड़े - 1/4th cup
  • Butter । मख्खन - 2 tbsp
Other Ingredients 
  • Whipping Cream । क्रीम - 400 grams
  • Icing Sugar । आइसिंग शुगर - 4 tbsp
  • Vanilla Essence । वेनेला एसेंस - few drops - optional
  • Oreo Cookies । ओरियो बिस्किट - approx 20

    Procedure:

    Before starting, keep the Whipping Cream and the bowl to be used to whip the cream in the Fridge for good 3-4 hours to get chilled.

    For Chocolate Pudding

    1. In a small Saucepan, take all the ingredients from Milk till Rice Flour and mix well using a balloon whisk. 
    2. Switch on the flame and cook the milk mixture for approx 8-10 minutes till it thickens. Stir continuously to avoid lumps.
    3. When it is thick enough, turn off the flame and add chopped Chocolate and Butter. Mix till the Chocolate melts and the Pudding smoothens out.
    4. Transfer into a bowl and cover it with a Cling wrap such that a skin/layer does not form on the top of pudding.
    5. Keep it in Fridge for 3-4 hours to chill down completely. 




    Whipping Cream
    1. Take the chilled Whipping cream, Vanilla Essence and Icing Sugar in a bowl and whip till the stiff peak formed.
    2. Keep in the fridge till you use it for the final assembly of the Parfait.

    Crush the Oreos
    1. Take the Oreos cookies in a Ziplock bag and with the help of Rolling pin, crush them roughly and transfer into a bowl.


    Final Assembly
    1. Take the Chocolate Pudding out of refrigerator and make it smooth with the help of spoon or whisk. Fold in 3-4 tbsp of Whipped Cream in to the Chocolate Pudding.
    2. Pipe the Pudding and Whipped Cream into separate Piping bags to add the layers in the glasses. This step is optional, use can use spoon also to layer the Pudding and Cream in the serving glass.
    3. Take the Serving glasses, and layer them first with Pudding, next Whipped Cream and Crushed Oreos. Repeat the same till the glasses are full and garnish them with a Oreo Cookie.
    4. Serve it chilled.
    This recipe gives 4 medium size glasses Parfait and some extra Pudding for later use.
