There are Apples everywhere in the market and I don't want to miss a chance to bake a cake with one of the healthiest fruits available in the season. So today, I am sharing a Eggless version of Apple and Spice cake which is moist, soft and chunky. The addition of Spices like Cinnamon, Nutmeg and Ginger Powder gives this Cake a perfect warmth and subtle flavors which makes it so perfect for the current Weather.

Eggless Apple and Spice Cake

Note: All Ingredients should be at room temperature

Dry Ingredients to sieve together
  • All Purpose Flour (APF) । मैदा - 1 cup
  • Baking Powder । बेकिंग पाउडर - 3/4th tsp
  • Baking Soda । बेकिंग सोडा - 1/2 tsp
  • Salt । नमक - 1/2 tsp ( do not add if using salted butter)
  • Ginger Powder । सौंठ - 1/4th tsp (optional) 
  • Cinnamon Powder । दालचीनी - 1/2 tsp
  • Nutmeg Powder । जायफल - 1/4 tsp
Wet Ingredients 
  • Melted Butter | मक्खन   - 1/2 cup
  • Powdered Sugar । शक्कर - 3 tbsp
  • Vanilla Extract । वेनिला एक्सट्रेक्ट - 1/2 tsp
  • Lemon Zest* | नींबू की खुरचन*  - 1/2 tsp
  • Lemon Juice । नींबू का रस - 1 tsp
  • Condense Milk । कंडेंस मिल्क - 1 cup
  • Hot Water | गर्म पानी - 1/4th cup
To fold in the Cake
  • Apple । सेब - 2 medium size - peeled and chopped
  • Lemon Juice । नींबू रस - 1 tsp
* While removing the Yellow skin of the Lemon, take care not to scrap the white part underneath the yellow skin as that is the most bitter part of the Lemon and can ruin the taste of the cake.


Baking the Cake:
  1. Pre-heat the oven at 180°C and grease a 6*6 inch square Cake Tin with butter and place a Butter Paper.
  2. Mix all the Dry Ingredients together and sieve twice to remove all the lumps and to bring aeration.
  3. Peel and chop the one and half Apples in to small pieces and slice the remaining half lengthwise to add on top of the batter. Coat the Apples with Lemon Juice to prevent them turning Black. 
  4. In an another bowl, take melted Butter, Condense Milk and Sugar and whisk for good 2 minutes. Next add Lemon Zest, Vanilla Extract and mix well.
  5. Now fold in half of the Flour mix into the wet ingredient and add 2 tbsp of water.
  6. In the remaining Flour, mix the chopped apple and add into the Wet mix.
  7. Add the lemon Juice and mix well. At this stage, if you feel the consistency is too thick, add the remaining 2 tbsp of water. Batter consistency should be pourable and not runny.
  8. Transfer the Batter into a grease Pan and add sliced apple on top. Bake it for 50-60 minutes at 180°C or until a skewer inserted in the middle comes out clean.
  9. Let the Cake cool down for 10 minutes in the pan and then take it out on a wired rack and cool it down.
Once the Cake cools down, sprinkle some Icing Sugar and serve warm with chilled Ice cream.
