Indo-Chinese is an adaptation of Chinese cooking techniques and equipments ( like Shallow frying in a Wok on high flame and using the ingredients like MSG, Soy Sauce etc) with local spices to suit the Indian tastebuds. The Indo-Chinese cuisine is said to have been developed by the small Chinese community that has lived in Kolkata for over a century. Today, you can find Indo-Chinese dishes in almost every restaurant and loved by all generations.  

Today I am sharing the recipe of Vegetable Manchurian Gravy which is a hit in my family. 
Manchurian Balls comes out soft due to the addition of Poha (Flattened Rice) and steaming of vegetables. Here, any combination of vegetables can be used to make Manchurian Balls. Also, if you don't like the gravy to be spicy, you can omit the addition of Green Chillies but do not skip the Spring Onions as it adds a lot of flavours in the recipe.

Vegetables Manchurian Recipe

For Dumplings (Manchurian Balls)

  1. Shredded Cabbage | बंदगोभी - 1 cup
  2. Capsicum । शिमला मिर्च - 1/2 cup finely chopped
  3. Carrots । गाजर - 1/2 cup finely chopped
  4. Scallions| Spring Onion Whites । हरी प्याज का सफेद भाग  - 1/4 cup finely chopped
  5. Spring Onion Greens । हरी प्याज़ का हरा भाग - 1/2 cup finely chopped
  6. Poha । पोहा - 1/4th cup soaked and drained
  7. Cornflour । कॉर्नफ्लॉर - 2 tbsp
  8. Ajinomoto । अजीनोमोटो - 1/2 tsp
  9. Soy Sause । सोय सॉस - 1/4 tsp
  10. Vinegar । सिरका - 1/4 tsp
  11. Black Pepper Powder । काली मिर्च - 1/4 tsp
  12. Salt । नमक to taste
  13. Oil । तेल 
For Gravy
  1. Ginger । अदरक - 1 tbsp finely chopped
  2. Garlic । लहसुन - 1 tbsp finely chopped
  3. Green Chillies । हरी मिर्च - 2 medium roughly chopped
  4. Scallions| Spring Onion Whites। हरी प्याज का सफेद भाग  - 1/4th cup
  5. Spring Onion Greens । हरी प्याज़ का हरा भाग- 1/4th cup
  6. Soy Sause । सोय सॉस- 1 tbsp
  7. Vinegar । सिरका- 1/2 - 1 tbsp
  8. Red Chilli Sause । चिल्ली सॉस - 1 tbsp
  9. Ketchup । केचप - 1 tbsp
  10. Ajinomoto । अजीनोमोटो - 1/4 tsp
  11. Salt । नमक to taste
  12. Black Pepper powder । काली मिर्च - 1/4th tsp
  13. Cornflour ।  कॉर्नफ्लॉर - 2 tbsp
  14. Water । पानी - 1.5 to 2 cups
  15. Oil । तेल - 1.5 tbsp
For Garnishing
  1. Spring Onion Greens । हरी प्याज़ का हरा भाग
  2. Sesame Seeds । तिल 


Manchurian Balls preparation:

  1. In a Microwave safe bowl, take the chopped Cabbage, Carrot and Capsicum and steam them for two minutes. ( Steaming will make the Manchurian Balls soft but this step is optional. Vegetables can be used raw. )
  2. Once the Vegetables cool down, squeeze out the water as much as possible.
  3. Now mix-in the ingredients from point 4 to 12 and make lemon size balls. ( To test if the Manchurian balls are not breaking in the oil, first make only 1 ball and follow step 4)
  4. Heat oil in a Kadhai on medium-high flame. Once oil is nice and hot, deep fry 1 Manchurian Ball to ensure it is not breaking. If it breaks, add 1-2 tbsp of Cornflour in the existing and mix well to make rest of the balls. Deep fry them on Medium-High flame and take them out on tissue paper once done.

Manchurian Gravy preparation:
  1. In a bowl, take all the Sauces and Spices mentioned from point 6 to 12 and mix well.
  2. In another bowl, mix 2 tbsp of Cornflour with 3-4 tbsp of Water.
  3. In a Wok, heat oil on a high flame. Add Ginger, Garlic & Green Chillies and saute for a minute. Add Scallions and saute it again for a minute or so till the Onions become soft.
  4. Now add the Sauces and Spice mix prepared in Step 1 and cook for 30-40 seconds. Add water and bring it to the boil.
  5. Add the Cornflour mixture and cook it for 5-7 minutes or till it become slightly thick.
  6. Add the Manchurian Balls and cook it for a minute. (Manchurian Balls should be added in the gravy when ready to serve)
  7. Garnish it with Spring Onion greens and toasted Sesame seeds. Serve immediately.  
  1. Prepare the Manchurian Balls and Gravy and keep them ready. When you have to serve, reheat the Gravy and then add the Balls. 

Step by Step pictures:

Take Veggies in a Microwave safe bowl and steam it for 2 minutes
Once the Veggies cool down, squeeze out the water and add rest of the ingredients mentioned from point 4 to 12.
Make 1 Manchurian Ball and deep fry to test if it is not breaking in the Oil.
Deep fry all the Manchurian Balls.
Heat oil in a wok/Kadhai on high flame.
Saute Ginger, Garlic and Green Chillies for a minute.
Add Scallions and saute it till they become soft.
Add the Sauces and Spices mix.
Add water and bring to a boil. Next, add the cornflour slurry and cook it for another 5-7 minutes.
Add Manchurian Balls and cook it for another minute or two.
Serve the Manchurian with Fried Rice or Noodles.
