Apple being my favourite fruit after Mango, not just because of it's health benefits but also because of the versatility it provides to create many recipes either baked or cooked. I have already shared the Eggless Apple n Spice Cake recipe in the past which was so delectable with all the goodness of Apple.
Today, I am sharing the Apple Crumb Cake recipe which demands a little more time and efforts but it's not a secret that best things don't come easy! Once you are through with it, you get an Apple Crumb Cake that is crumbly, buttery on the outside and loaded with apples and spices inside.

Eggless Apple Crumb Cake

Note: All Ingredients should be at room temperature

Dry Ingredients to sieve together
  • All Purpose Flour (APF) । मैदा - 1.75 cup
  • Baking Powder । बेकिंग पाउडर - 1.5 tsp
  • Baking Soda । बेकिंग सोडा - 3/4 tsp
  • Cinnamon Powder | दालचीनी पाउडर  - 1/2 tsp
  • Ginger Powder । सौंठ - 1/2 tsp
  • Salt । नमक - 1/2 tsp
  • Oil । तेल - 6 tbsp
  • Brown Sugar । ब्राउन शुगर - 1/2 cup
  • Powdered Sugar । शक्कर का बूरा - 1/4th cup
  • Lemon Juice । नींबू का रस - 1 tbsp
  • Lukewarm Milk । गुनगुना दूध - 3/4th to 1 cup
  • Vanilla Extract । वनैला एक्सट्रेक्ट - 1 tsp
For the Crumb
  • APF । मैदा - 3/4th cup
  • Quick Oats । ओटस - 1/2 cup
  • Brown Sugar । ब्राउन शुगर - 3/4th cup
  • Butter । मख्खन - 1/2 cup cold and cubed in to small pieces
  • Cinnamon Powder | दालचीनी पाउडर   - 1 tsp
  • Apples । सेब - 3 small or 2 cups chopped in to small pieces.
  • Lemon Juice । नींबू का रस - 1 tsp


For the Crumb topping:
  1. Take Butter and cut into small pieces and freeze it for 10 minutes. Meanwhile take Flour, Oats, Brown Sugar and Cinnamon in a bowl and mix them. Once the Butter is absolutely chilled, using the Pastry Cutter or the finger tips to mix it in the Flour-Oats mixture. Few large chunks of butter here and there are fine. Allow it to rest in the fridge till the time you need it.
  2. Wash, peel and chop the Apples into small pieces and squeeze Lemon juice on top of it to avoid oxidation.

For the Cake Batter:

  1. Sieve APF, Baking Powder and Baking Soda in a bowl and mix in the Salt, Ginger Powder and Cinnamon Powder.
  2. In a blender, take all the remaining Ingredients like Oil, both the types of Sugar, Vanilla Extract, Lemon Juice and Milk (use only 3/4th cup at this stage), Vanilla Extract and blitz for 30 seconds. Mixture will become smooth and airy.
  3. Add all of it to the Dry Ingredients and mix well with the help of balloon whisk. The Batter should be of thick consistency. At this stage, if needed, add remaining milk.
  1. Grease an 8 inch Springform Pan with the Butter on the sides and the bottom and dust it with the Flour generously. Tap and remove the excess Flour.
  2. Take less then half of the Cake batter and spread evenly in the Pan. Top it with half of the Apple pieces and Crumb topping.
  3. Spoon the remaining batter all over the Crumb topping as it will make it easier to spread the batter.
  4. Layer it with remaining Apples and Crumb topping.
  5. Bake the cake at 180 degree Pre-heated over for 55-65 minutes or till the skewer inserted in the middle comes out clean.
