A few months back I visited a cafe and while checking their menu one thing that drew my attention was Carrot Cake. I ordered it along with coffee. While waiting for the Cake to come, I had imagine a nice slice of Carrot Cake with Cream Cheese frosting but to the contrary they served a warm Carrot Cake Muffin! Phew... all my imaginations shattered! Even the taste was just okay and nothing worth remembering.

That disappointment even continued until now and then I thought that the best way to satisfy the craving is to bake a Carrot Cake myself! So here I am, sharing the recipe of Eggless Carrot Cake with the Hung Yogurt Frosting!

For this cake, preparation actually starts a day before at least as we have to soak the Raisins in Orange Juice for a day and for the frosting, drain out all the excess water from the homemade curd to make Hung Yogurt.

This Cake is a little time taking in comparison to few other Cake recipes I have shared but the process becomes really enjoyable when you think about the delicious Carrot Cake you are going to get at the end.

Eggless Carrot Bundt Cake with Hung Yogurt Frosting

To soak the Raisins
  • Raisins । किशमिश  - 1/2 cup
  • Orange Juice । ऑरेंज जूस - 200 ml
To make the Hung Yogurt
  • Homemade Curd । दही - approx 400 ml - or can use store brought Hung Yogurt (250 gms)
  • Icing Sugar । आइसिंग शुगर - 1 - 1.5 cups (Can add less or more as per the preferences)
  • Butter । मक्खन - 3 tbsp

Dry Ingredients for the Cake
  • All Purpose Flour (APF) । मैदा - 1.5 cups
  • Baking Powder । बेकिंग पाउडर - 1 tsp
  • Baking Soda । बेकिंग सोडा - 1 tsp
  • Cinnamon Powder । दालचीनी पाउडर - 1 tsp
  • Ginger Powder । जिंजर पाउडर - 1/2 tsp
  • Nutmeg । जायफल -1 pinch
Other Ingredients for the Cake
  • Soften Butter । मक्खन  - 1/2 cup 
  • Brown Sugar । ब्राउन शुगर - 1/4th cup
  • White Sugar । वाइट शुगर - 1/2 cup
  • Left Over Orange juice used to soak the raisins । ऑरेंज जूस - 3 tbsp
  • Hot Milk । गरम दूध - 1/2 cup
  • Grated Carrots । गाजर कद्दूकस करी हुई - 1 cup
  • Vanilla Extract । वनैला एक्सट्रेक्ट - 1 tsp
  • Flax Egg । अलसी - soak 1 tbsp of Flax powder in 2.5 tbsp of water for 10 minutes.


Steps to do a day before:
  1. Soak the raisins in Orange Juice and keep it in the fridge for minimum one day.
  2. If using homemade curd, spread a Muslin Cloth over a colander placed over a deep bowl to collect the whey. Add curd to the cloth. Keep it in the fridge for a 10-15 hours.
Bake the Cake:
  1. Pre-heat the oven at 180°C.
  2. Grease a bundt pan with butter and then generously dust it with flour. Tap to remove the excess flour. Any other cake tin can also be used.
  3. Grate the Carrots using the fine grater. Drain and collect the orange juice we used to soak the raisins.
  4. Sieve all the Dry Ingredients in a bowl. Take 2 tbsp of the Flour mixture and mix into the strained raisins so that they wont sink at the bottom of the Cake.
  5. Take Softened butter and both types of sugar and whisk them for a good 2-3 minutes to bring the aeration. Add Flax eggs and 2 tbsp of Orange Juice and mix well. Mixture may look little curdled which is perfectly fine.
  6. Now, add the flour and milk alternatively to make a Cake batter.
  7. Fold-in the grated Carrots and flour coated Raisins into the batter.
  8. Transfer the batter to a prepared Bundt pan and tap to remove the air bubbles.
  9. Bake the cake in 180°C preheated oven for 55-65 minutes or till the skewer inserted in the middle comes out clean. 
  10. Let the Cake cool down in the pan for 10 minutes and then remove it on a wired rack by flipping it upside down and let it cool completely.
Frosting of the Cake:
  1. Take Butter in a bowl and whisk it for 4-5 minutes till it become pale and fluffy. Add Hung Yogurt and Sugar and whisk it again for 5 minutes.
  2. Once the cake cool down completely, frost it using the creamy Yogurt frosting and let it set in the fridge for a hour before serving it.
