Last weekend, when went to supermarket for weekly stuff, I found pineapples everywhere and could not resist myself from buying two of them with no idea about what I am going to do with those. This, I believe is the downside of going to supermarket that we end up buying more things then needed! :D



First few days, they were sitting on the table untouched, later I used few slices in the breakfast but was still finding ways to consume the rest. Made Pineapple Raita and then finally decided to make this gorgeous, moist, buttery, full of tropical flavours, Pineapple upside down Cake. The Cake came out very well and vanished in no time. It was perfectly sweet and flavoursome! I invite you to try it out for yourself!



Upside Down Fresh Pineapple Cake

Ingredients:


For the Caramel
  • Butter । मक्खन - 1/4 cup
  • Brown Sugar । ब्राउन चीनी  - 1/2 cup
  • Lemon Juice । नींबू का रस - 1 tsp
Dry Ingredients for the Cake
  • All Purpose Flour (APF) । मैदा - 1.5 cups
  • Baking Powder । बेकिंग पाउडर - 1 tsp
  • Baking Soda । बेकिंग सोडा - 1 tsp
  • Desiccated Coconut । नारियल का बूरा - 1/2 cup
Other Ingredients for the Cake
  • Softened Butter । मक्खन  - 6 tbsp 
  • White Sugar । वाइट शुगर - 3/4th cup
  • Lukewarm Milk । दूध - 1/2 cup
  • Pineapple Extract । पाइनएप्पल एक्सट्रेक्ट - 1/4 tsp
  • Fresh Pineapple | पाइनएप्पल - 4-5 slices

Procedure:

To do for the Caramel Sauce:
  1. In a pan, take butter and Sugar and let the Sugar melt on slow flame and then cook it for 3-4 minutes to make the sauce. Add lemon juice and switch off the flame and transferred to the already greased Cake tin. Layer the Pineapple slices over the Caramel Sauce.
Bake the Cake:
  1. Pre-heat the oven at 180°C.
  2. Sieve APF, Baking Powder and Baking Soda in a bowl. Mix in the desiccated coconut flakes.
  3. Take Softened butter and sugar and whisk them for a good 2-3 minutes to bring the aeration. 
  4. Now, add the flour and milk alternatively to make a Cake batter. Add Pineapple Extract and mix well.
  5. Pour the batter carefully over the pineapple slices and tap to even out the cake batter.
  6. Bake the cake in 180°C preheated oven for 55-65 minutes or till the skewer inserted in the middle comes out clean. 
  7. Let the Cake cool down in the pan for 5 minutes and then transfer on the serving plate. Serve it warm.
