Moist, Soft and delicious Red Velvet Cake with Cream Cheese Frosting and White Chocolate Barks.

Valentine's Day is round the corner and what else could be the better way to celebrate than a Red Velvet cake. This cake is very delicious, soft and moist with a hint of Chocolate. The tangy, salty and sweet Cream cheese is going so well with this Cake which is iced with White Chocolate barks and the shavings! :)

Eggless Red Velvet Cake

1) All Ingredients should be at room temperature.
2) I have used two 6 inches cake tins to make cake tall by cutting eack baked cake into halves which will give us four cake pieces to frost with. You can also use one 9 inches Cake tin to bake into 1 pan.

Dry Ingredients to sieve together
  • All Purpose Flour (APF) । मैदा - 2 cups
  • Baking Powder । बेकिंग पाउडर - 2 tsp
  • Salt । नमक - 1/2  tsp 
  • Cocoa Powder | कोकोआ पाउडर  - 3 tbsp
  • Corn Flour । कॉर्नफ्लोर  - 3 tsp
Other Ingredients for Cake 
  • Flavourless Oil । तेल - 3/4 cup
  • Sugar। चीनी - 1.25 cups
  • Yogurt । दही - 1/2 cup
  • Hot Milk । गर्म दूध - 1 cup
  • Vanilla Essence । वैनिला एक्सट्रेक्ट - 1 tsp
  • White Vinegar | सिरका - 1 tsp
  • Baking Soda । बेकिंग सोडा - 1 tsp
  • Concentrated Red Food Color । खाने वाला लाल रंग - 6-7 drops
For Cream Cheese Frosting
  • Butter । मख्खन - 100 gms
  • Cream Cheese । क्रीम चीज़ - 300 gms
  • Icing Sugar । इसिंग शुगर - 2 to 2.5 cups

For Garnishing
  • Compound White Chocolate । वाइट चॉकलेट  - 200 gms
  • Concentrated Red Food Color । खाने वाला लाल रंग- 2 drops
  • White Chocolate shavings । वाइट चॉकलेट शेविंग्स 


Baking the Cake:
  1. Pre-heat the oven at 180°C and grease two 6 inches cake tins with butter. Place a Butter Paper in it.
  2. Sieve all the Dry Ingredients twice and keep them ready in a bowl.
  3. In an another bowl, whisk together Oil, Sugar, Yogurt and Vanilla Essence for 2-3 minutes till it becomes smooth, airy and thick. Now alternatively add Dry Ingredients and Hot Milk in 3 parts.
  4. In another small bowl, take Vinegar and Red Food Colour; mix well. Next add Baking Soda and immediately add the mixture to the cake batter. Fold the Vinegar-Soda mixture into the Cake batter gently.
  5. Divide and transfer the cake batter in to the prepared Cake tins equally and bake it in a pre-heated oven for 35-40 minutes or till skewer inserted in the middle comes out clean.
  6. Once baked, let the cake cool down in the tin for 5 minutes and then transfer cakes from both the tins on the wired rack and let them cool down completely before applying frosting.
For the Frosting:
  1. Take room temperature butter and whisk for 2 minute, next add room temperature Cream Cheese and again whisk for 3-4 minutes. Add Icing Sugar in 3 batches n whisk till the frosting become smooth and thick. Let the frosting rest in fridge for 2-3 hours. 
  2. Cut both the Cakes in to halves (vertically) so that you will have total four round cake elements. Place sliced Cake on a Cake board and apply Frosting one by one. Repeat the frosting on the Cake elements alternatively. Now apply the frosting on the top and side of the cake and let it chill for at least 2 hours or overnight in the Fridge. 

For the Chocolate Garnishing:

  1. Chop the white Chocolate roughly and melt it using double Boiler method. Separate 2 tbsp of melted Chocolate in a bowl and add Red Food Color.
  2. Place Butter Paper on a tray and spread melted Chocolate evenly into a think layer. With the spoon, spread the Coloured Chocolate randomly over the layered Chocolate and let it set in the fridge for 10-15 minutes. Once set, break the Chocolate barks into random shapes.
  3. Now, take the Cake in one hand and apply the Chocolate Shavings on the sides of the cake. Place it on a serving plate and place the Chocolate barks on to the cake before serving.
