Chickpea Salad Sandwich | छोले से बना सैंडविच

Do you know that India is the largest producer of Chickpeas. Isn't it amazing. We have so many amazing recipes to relish this protein packed legume which is roughly 7500 years old and also known as one of the earliest cultivated legumes. This legume was originally cultivated at Mesopotamia and the Eastern Mediterranean.
Chickpeas are mainly of two types - Desi and Kabuli. Desi ones are smaller, darker seeds and has a rough coat. Whereas, Kabuli is a larger and lighter seed and has a smooth coat.

Today, I am sharing an easy, delicious and healthy Sandwich recipe which can be enjoyed by anyone and everyone from weight-watchers, diet conscious to foodies who need something new every-time out of the same ingredients like me. 

In this Chickpea Salad, tahini dressing such a refreshing and earthy taste that is totally unforgettable. I highly recommend you to go an extra step and prepare this tahini dressing and do not replace it with ready-made mayo or ketchup. Tahini dressing not only adding a great taste but also providing the moisture to the otherwise dry Chickpeas.

Ingredients for Tahini Dressing
  • Sesame Seeds - 1/4th cup
  • EV Olive Oil - 1 tbsp
  • Lemon Juice - 1 tbsp
  • Garlic Cloves - 4 big
  • Honey - 1 tsp
  • Salt to taste
  • Black Pepper Powder - 1/2 tsp
  • Water - 2-3 tbsp

Ingredients for Chickpea Salad
  • Chickpea - 2 cups (soaked over night and boiled)
  • Finely chopped Veggies - 1 cup ( I have used Onions, Tomatoes, Cucumber and Beetroot)
  • Salt to taste
  • Black Pepper Powder - 1/2 tsp
  • Chaat Masala - 1/2 tsp
  • Tahini Dressing - 1/4th cup

Ingredients for Sandwiches

  • Bread of your choice
  • Butter


Make the Tahini Dressing:
  • Toast the Sesame seeds on low flame for 3-4 minutes or until they start splutter.
  • Transfer the toasted sesame seeds in the food processor/grinder jar and grind them when they are still warm. It will help seeds in releasing oil and become a paste like consistency.
  • Give few pulses and mix in between with a spoon.
  • After few pulses, add a tablespoon of olive oil and give a pulse. At this point, our Tahini paste is ready.
  • Now, to make the Tahini dressing, add garlic cloves, salt, black pepper powder, lemon juice, honey and water and give few pulses. 
  • Transfer to a bowl. Give a taste test and adjust the seasoning as per your liking.

Make the Chickpea Salad:
  • Take the boiled Chickpeas to a bowl and mash them with the help of masher or your hands.
  • Add in all the remaining ingredients and mix well. Taste and adjust the seasoning.

Make the Sandwich:

  • Apply butter on the inner side of the bread slices and add generous amount of Chickpea salad on one on of the slice. Cover it with another slice and apply butter on top. Repeat the same for all the Sandwiches.
  • Now, you can toast the sandwiches on a griller or a Sandwich maker until crispy.
  • Serve them hot along with Wafers/ Ketchup/ Tea.
