Besan Ragi Chilla

One of the most common breakfast recipes in India is besan Chilla or a fancy name would be savoury Pancakes. It is one such easy and quick recipe that anyone can prepare in no time. Mix Besan flour with vegetables of choice and some spices to make a wholesome and filling breakfast. 

Besan Chilla is my go to recipe when I used to get late for office. You only need to add besan, sooji, onion and basic spices to make healthy breakfast ready to be devoured on the way to office. And, for moms, it's a task finding different ways to include healthy grains in their toddler's diet and that's where, this recipe can come handy as well. This recipe can be made for kids without green chillis and cabbage and they can enjoy these Chillas with ketchup. I am sure you also will find it interesting and wholesome. You can add veggies of your choice to the recipe but try to keep it simple and let the flavour of besan and ragi come out.

Ingredients for Bharwa Bhindi
  1. Chickpea Flour/Besan - 1 cup
  2. Ragi Flour - 1/2 cup
  3. Flaxseeds Powder - 2 tablespoons
  4. Asafoetida - a pinch
  5. Green Chilli - 1 finely chopped
  6. Onion - 1 medium size - finely chopped
  7. Cabbage - 1/2 cup finely chopped
  8. Turmeric Powder - 1/4th tsp
  9. Black Pepper - 1/2 tsp
  10. Salt to taste
  11. Water to make the batter
  12. Oil/Ghee - 2-3 tbsp

Procedure
  • In a large bowl, add all the Ingredients except water and Oil. Mix well.
  • Make a semi-thick batter by gradually adding the water. Depending on the quality of besan and Ragi, you may need a little more or less water. Let it rest for 15-20 minutes.
  • Heat a skillet on a medium flame. Apply a very little oil/ghee and spread a ladle full of batter on the skillet and let it cook on low-medium flame from one side for a minute or until you see golden spots. Apply oil/ghee on the edges.
  • Turn the Chilla and let it cook from other side till you see the golden spots.
  • Repeat the same with the remaining batter.
  • Chilla can be made thick or thin as per personal choice.
  • Serve them hot alongside Ketchup or green chutney.
