FALAFEL & HUMMUS | फलाफल और हमस
Tuesday, May 26, 2020This recipe is made with simple every day ingredients we all have in our Kitchen and very easy to make.
Important Points:
- Tahini paste can be easily made at home. I have shared the recipe on vidzKitchen here: Chickpeas Sandwich. Dry roast 1/4th cup of Sesame seeds and grind to a smooth paste using 2-3 tbsp of Olive oil.
- When you are ready to deep fry the Falafels, first make only 1 ball/patty and deep fry to check if it is not breaking. If it does break, add 1-2 tbsp of Chickpea flour or bread crumbs to the falafel batter and make balls.
- Always deep fry Falafels on medium flame. Else they will not be cooked from inside and will become darker on the outer side.
- You can make wraps out of these Falafels and Hummus or stuff inside a Pita bread to make it a complete meal.

- Boiled Chickpeas - 1 cup
- Garlic Cloves - 4-5
- Tahini Paste - 2 tbsp
- Lemon Juice - 2 tbsp
- Olive Oil - 2-3 tbsp
- Salt to taste
- Black Pepper - 1/2th tsp
- Water - 3-4 tbsp to grind Hummus to a smooth paste
Ingredients for Falafel
- Chickpeas - 1 cup soaked overnight
- Coriander Leaves - 1 cup roughly chopped
- Onion - 1 medium roughly chopped
- Garlic Cloves - 6-7
- Green Chillies - 2-3
- Cumin Seeds - 1 tsp
- Salt to taste
- Black Pepper - 1/2 tsp
- Baking Soda - 1/4th tsp
- Besan - 3-4 tbsp
Procedure
For Hummus
- In a food processor, add all the ingredients mentioned under "Ingredients for Hummus" and grind to a smooth paste. Add 1-2 tbsp of more water if needed.
- Give it a taste test and adjust seasoning.
- Transfer to a bowl, cover, and refrigerate.
For Falafels
- Rinse the dried Chickpeas for 2-3 times and soak them in enough water for 8-9 hours a night before. Next day, drain out the water completely and rinse them under running water.
- In a food processor, add ingredients from 1 to 8 mentioned under "Ingredients for Falafel" and grind to a coarse batter.
- Transfer to a bowl, mix in the Chickpeas flour/Besan. Cover and refrigerate for 30 minutes.
- Make the falafel balls/patties.
- Deep fry on medium-low flame till turn golden brown.
