Vada Pav Quesadilla

When you think of Mumbai street food, I am sure Vada Pav comes at the top of the list along with Pav Bhaji, Ragda Patties, Sev Puri, Sandwiches and many many more. Vada Pav is one of my favourite snacks too, it is a burst of flavours - crispy, spicy potato Vada placed inside a Pav along with garlic chutney and green chilli on the side. I still remember, when I first visited Mumbai, every nook and corner of the city has a Vada Pav vendor selling fresh and hot Vada Pavs. It was an eye pleasing view and tummy-satisfying experience, yeah, I have eaten a-lot of Vada Pavs in my 2 days of stay in the city :) .

And, Quesadilla - this is an Mexican dish, a combination of cheese (queso) with tortilla. The most basic quesadilla is simply a grilled tortilla with melted cheese inside. You can create endless filling options to make your favourite quesadilla. So, why not with our very famous and favourite Vada Pav? This is a delicious combination of 2 dishes into one that came out beautifully - it is cheesy, spicy, garlicky and not deep fried. I find this combination a hit if you are craving for some Vada Pav and do not have access to Pav or don't want to eat fried Vadas.

Note: All the components of VadaPav Quesadilla has salt - from tortilla, to garlic and green chutney, potatoes filling and cheese. Therefore, go easy with salt at each step.

Ingredients for Tortillas
  • Wheat Flour- 1 cup
  • All Purpose Flour- 1/2 cup
  • Salt to taste
  • Oil - 1 tsp
  • Water to knead a soft dough
Ingredients for Dry Garlic Chutney
  • Desiccated Coconut - 1/2 cup
  • Sesame Seeds- 2 tbsp
  • Garlic Cloves - 18-20 small 
  • Chilli Powder - 2-3 tbsp ( can be adjusted as per preference)
  • Salt to taste
  • Oil - 1 tsp
Ingredients for Potatoes Filling
  • Boiled & Mashed Potatoes - 1.5 cups
  • Mustard Seeds - 1/2 tsp
  • Curry Leaves - 5-7 
  • Freshly grounded paste of 1 chilli+4 garlic cloves+1/2 inches Ginger
  • Turmeric powder- 1/2 tsp
  • Asafoetida- a pinch
  • Salt to taste
  • Lemon Juice - 1 tsp 
Ingredients to assemble the Quesadilla
  • Grated Cheese - 1 cup ( I have used mix of Cheddar and Processed Cheese)
  • Butter or Ghee - 4 tbsp
  • Coriander chutney


To make Tortillas:
  • Take all the Ingredients mentioned under the section "Ingredients for Tortillas" except water. Rub the oil in the flour nicely and knead the dough by adding water little at a time.  Knead it for good 5 minutes to make it a smooth dough and let it rest for 10 minutes.
  • Once the dough is rested, divide it to 6 equal balls and roll each portion in an approx 5-6 inches diameter circle.
  • Heat up a skillet on medium flame and cook each tortillas from both sides until you see little brown spots.

To make dry Garlic Chutney: 
  • Add 1 tsp of Oil in a pan and let it heat up on low flame. Once it is little warm, add peeled garlic cloves and sauté for 30-40 seconds or till you see little spots on the garlic.
  • Next, add the Sesame seeds and sauté for another 30 seconds or till they start spluttering.
  • Add the desiccated coconut and sauté for few seconds. Switch off the flame and continue stir the mixture till the pan is slightly cooled down.
  • Transfer the mixture in a grinder jar and add chilli powder & salt. Grind it to make a coarse paste. Taste the dry chutney and adjust the salt.

To make dry Potato Filling:
  • Add 1 tsp of oil in a pan. Once it is hot, add mustard seeds. Once seeds starts spluttering, add curry leaves and grounded chilli-garlic-ginger paste. Sauté it till raw smell disappears on low flame.
  • Add turmeric powder and give a quick mix. Add roughly mashed potatoes, salt and lemon juice. Mix well and give it a taste taste.

To assemble and shallow fry Quesadilla:
  • Take 2 tortillas and apply green chutney on one side of each tortilla. Spread potato filling on one tortilla. Sprinkle generous amount to dry garlic chutney and grated cheese on top of potato mixture and cover with other tortilla like we do when prepare a Sandwich.
  • Repeat the same for the remaining 4 tortillas.
  • Take a pan on medium flame and toast the quesadilla by applying butter on both side till crispy.
