You must have seen so many recipes of Zucchini-Chocolate cake and wonder if you can also make the same at the comfort of your home but disheartened as this is one such vegetable which is not easily available to us and even if it does, it's much of a struggle for just one recipe. 

Therefore, this led me to experiment with our very own Lauki (bottle gourd). This is a summer vegetable and is accessible to all of us. We all are familiar with its taste and texture and use it in our day to day life. 
You can make so many dishes with this vegetable like kofta, lauki-chana dal, handvo, stuff paratha, bharta, kheer, halwa and the list goes on. 

But now, we can even add this to our Chocolate cake and you will not even realise that you are eating a vegetable in your Chocolate cake. Isn't it a great? 


I have made this cake healthier by replacing some of the white sugar with Jaggery sugar and by adding flax-egg which not only work as a egg replacer but also provide the many benefits of this super food. I have mentioned few health benefits of flaxseeds in my Besan-Ragi Chilla post. But if you do not have flax seeds handy, you can totally skip the flax egg and instead add 2 tablespoons of milk.

This is a rich, moist and decadent Eggless Bottle gourd Chocolate cake which is easy to make. If you do not have OTG or microwave oven, then you can also bake it on stove top. Eggless Chocolate Bottle Gourd Cake

Ingredients:


Note: All Ingredients should be at room temperature
  • Flaxseeds powder | अलसी का पाउडर - 1 tbsp
  • Water | पानी - 2 tbsp 
  • Milk | दूध - 1/2 cup 
  • Lemon Juice | निम्बू का रस - 1 tsp
  • All-Purpose Flour (APF) । मैदा - 1 cup
  • Baking Powder । बेकिंग पाउडर - 1 tsp
  • Baking Soda । बेकिंग सोडा - 1/2 tsp
  • Cocoa Powder | कोको पाउडर - 1/4th cup
  • Coffee Powder | कॉफ़ी - 1 tsp
  • Flavourless Oil | तेल - 2  tbsp 
  • Butter | बटर - 1/4th cup 
  • White Sugar | चीनी - 1/2 cup 
  • Jaggery Sugar | गुड़ की सक्कर - 1/4th cup 
  • Bottle-gourd | लौकी - 1 cup grated 
  • Chocolate chunks | चॉकलेट के छोटे टुकड़े - 1/2 cup 
  • Chocolate Sause (optional)
Procedure

  • Pre-heat oven at 180 degree celsius. Grease a 6" circular pan with butter and dust with Cocoa powder.
  • In a small bowl, mix flaxseed powder with 2 tbsp of water and let it rest.
  • To make buttermilk, add 1 tsp of lemon juice in half cup of milk and set aside.
  • Sieve together APF, baking powder and cocoa powder.
  • In another bowl, whisk together butter, oil, while and brown sugar for 5 minutes. Add flax-egg and again whisk for 2 minutes.
  • In the prepared buttermilk, add coffee powder and baking soda and give a stir.
  • In the butter-sugar mixture, add flour mix and prepared buttermilk and fold in gradually.
  • Add 1 cup of grated bottle gourd and chopped chocolate chunks. Fold in gently.
  • Transfer the cake batter to the prepared cake tin and bake for 40-45 minutes in 180 degrees pre-heated oven.
  • Allow the cake to cool down for 5 minutes in the cake tin itself and then transfer to the cooling rack to come to room temperature.
  • Garnish with chocolate sauce and serve.
